Chocolate Brownies

These are very tasty and take very little in terms of preparation time

Ingredients

  • 275g softened margarine
  • 375g caster sugar
  • 4 eggs
  • 75g cocoa powder
  • 100g self raising flour
  • 100g plain chocolate chopped into small pieces (can be shattered using a mallet if preferred)

Method

  1. make sure that the plain chocolate is in small pieces (less than 1cm in any length). You can literally cut it, or just break it up how you see fit (put in plastic bag and hit a few times against a solid surface?). They should be small but not too small as they’re meant to be ‘chips’ in the brownies
  2. Mix everything together until smooth (apart from the chocolate bits)
  3. Pour the mixture into a lined tin (30cm x 23cm x 4cm)
  4. Bake at 180C / 350F / Gas Mark 4 for 45 minutes.
    • Remember that if a fan oven to reduce things by about 20C and check more often that it’s not dried out
    • If browning too quickly, cover with tin foil for the last 10-15 minutes to avoid burning
  5. while still hot, cut the brownies, but leave to cool before separating
